Paneer Butter Masala Recipe: Simple and Easy to Make
Paneer butter masala is a rich and creamy curry that is made with paneer, onions, tomatoes, cashews, butter, and spices. It is like a dreamy dish which you need to add to your favorite food item list. If you haven’t tried it then make sure to do that when you visit the best Indian restaurant. Now, let’s take you through the steps to make paneer butter masala.
Choose between homemade paneer or store-bought paneer
It is up to you whether you want to use store-bought paneer or homemade paneer. In case, you are using a store-bought paneer, then add 2 cups of hot water in a bowl. Add in your paneer and let it rest for 20 minutes as this makes the paneer soft.
Now you need to take oil (1 tablespoon) into a pan. Once it is hot add cubed onions (1 cup) and green cardamoms (2). Let it saute on medium flame till they become transparent or pink in color. It will take around 4 minutes.
Add in tomatoes
Now, you need to add chopped tomatoes (1½ cup) and salt (¾ tsp). Let it saute for 2 to 3 minutes. Once done, cover the pan and wait till the time it gets mushy.
Add in the dry ingredients
Tomatoes and onions are cooked, once they become soft and mushy. Now you need to add in the dry ingredients which are:
¾ to 1 teaspoon red chili powder (low heat variety)
1 teaspoon coriander powder (optional)
12 to 14 cashews
¾ to 1 teaspoon garam masala
¾ teaspoon sugar (optional, to balance the flavors)
You need to saute it for around 2 to 3 minutes, and now you will begin to smell the aroma. Turn off the stove.
Let it cool down
Once this masala has cooled down completely, you need to put that into the blender. Add in one cup of water and blend it until it becomes like a smooth puree.
Heat the pan and add spices
Now you need to heat the pan on low flame and add in 1½ tbsp butter. Once the butter melts you need to add the spices (if you don’t have them, even then it is fine). You need to add:
2 green cardamoms
1 bay leaf
½ inch cinnamon
Let the spices get the sizzle
Now you need to wait till the spices sizzle and then add in the garlic paste (1½ tsp). Let it saute for around 1 minute, till time it smells good. You need to do this on low to medium heat so that it does not get burnt.
Add in the onion-tomato puree
Now, you need to add in the onion-tomato puree along with red chili powder (¼ tsp) to give it that deep color.
Add in water to make gravy
Right away add in ½ cup water and give it a good mix to make it gravy-like consistency. If it seems thick you can add in water.
Now you will be able to see the right consistency of gravy. Open the lid and let it cook till the time it becomes thick. Do the taste test to see if you need to add in more salt.
Add in Kasuri methi
Now you need to add in 200 to 250 grams of paneer and Kasuri methi (1 tablespoon) by crushing it. Now, add in the butter masala. If the gravy is runny, do not add paneer.
You need to stir it well on low flame for around 1 to 3 minutes. Don’t do it more than that otherwise, paneer will become hard. Add in some cream (2 to 3 tablespoons) which gives a thick creamy consistency.
