BLUE SHRIMP OF NEW CALEDONIA, ITS CHARACTERISTICS

 The New Caledonian Blue Shrimp has among its distinctive features the development of its coral, renowned for its delicate, soft but sometimes “crunchy” flavor. To reach its maximum physical maturity it can take even 8 to 9 months. It measures, on average, 20 cm in length and weighs 250 grams. It is also nicknamed “saphira”, due to the long pincers of a beautiful deep blue like sapphires. Its pulp is of a fineness comparable to that of lobster, with a slightly sweet flavor. 

A PRIMICE OF THE SEA, A CULINARY RARITY 

The New Caledonian Blue Shrimp is a very rare species. Suffice it to say that annually, dozens and dozens of small local producers manage to harvest less than 90 tons per year.
