CREAM OF CHICKPEA SOUP

INGREDIENTSFOR THE SOUP:

1 Tbsp olive oil

2 medium onion

2 garlic cloves

fresh basil

saltblack pepper 2 cup canned chickpeas 1 cup water

FOR GARNISHING (OPTINONAL):Black pepperolive oilfresh basi lBacon croutons Parmesan Cheese Fresh basil

INSTRUCTIONS In a medium pot heat olive oil over medium heat.Cook onions for 1 minute and then add garlic.Add basil, salt, pepper and chickpeas.Stir, then add water and stock.Simmer soup for 20-30 minutes.Transfer to a blender and puree until smooth.Adjust the flavor, add more salt or pepper.Garnish with black pepper flakes, olive oil, basil croutons and Parmesan cheeseServe warm.
